Salesforce limits field history tracking to 20 fields per object. Field Audit Trail raises that to 200, but it requires a paid Salesforce Shield license and still relies on standard field history tracking.
For fields like Long Text Area, Salesforce records that a change occurred but leaves the old and new values blank. Field Audit Trail simply archives those blank values. Unlimited Field Tracking fills those gaps:
